Almond and honey hotcakes

For your weekend pleasure, we’re sharing a recipe for healthy almond and honey hotcakes. Soft and tender with a delicately nutty flavour, you won’t believe how easy they are to make.

Ingredients & method:

  • 1 1/2 cups almond meal

  • 2 large free range eggs

  • 1/2 cup plant-based milk

  • 2 tbsp honey or maple

  • 1 tsp apple cider vinegar

  • 1 tsp baking soda

  • A pinch of sea salt

Combine all ingredients in a bowl, and whisk until smooth. If your honey isn’t runny, you can warm it gently in the milk beforehand to make the mixing process easier.

Lightly grease a large pan over medium-low heat with butter.

For each hotcake, spoon a heaped tbsp of batter into the pan. You can usually cook 3-4 at a time. As soon as little bubbles start to appear, turn the pancake over, then continue to cook for a further minute or so on the other side until golden.

Continue with the remaining batter.

Serve the hotcakes warm with whatever toppings you please.

Makes about 10-12 hotcakes.
