A recipe for vanilla, chia and hemp seed bircher

This is an easy breakfast - hemp, vanilla and chia seed bircher that can be adapted in various ways depending on what’s in your pantry. It’s excellent for making in advance for surf road trips, or simply to have in the fridge ready to eat post-waves.

Ingredients & method:

2 cups oat milk, or milk of your choice
4 tbsp hemp seeds or protein powder (optional!)
2 tbsp nut butter of your choice
2 tbsp honey or maple syrup
4 tbsp chia or flaxseeds
1/2 cup rolled oats
2 tsp vanilla extract

In a glass container or large jar, add all of the ingredients. Mix well, ensuring the chia seeds are well dispersed, then place in the fridge to soak overnight or for at least 2 hours.

Sometimes, I like to stir in extra milk if the mixture gets a little too gluggy. Soft and velvety is the consistency we’re after here!

Serve with fresh fruit and additional topping for prettiness.

Makes 3-4 serves.
