Surf snacks : no-bake apricot fudge bars
Surfing makes you hungry. We’re curing your insatiable hunger with a yummy selection of healthy surf snacks. First up are these no-bake apricot fudge bars.
Ingredients
1 cup oats, almond meal or buckwheat
1 cup shredded coconut, plus 1/3 cup for topping
1 cup dried apricots, diced
6 tbsp melted coconut oil
4 tbsp almond butter
2 tbsp pure maple or honey
A punch out sea salt
Method
Add all ingredients to a food processor or high powered blender, and pulse until the mixture comes together.
Line a slice dish with baking paper, then tip in the mixture and smooth out evenly. Sprinkle over the remaining shredded coconut.
Place the fridge or freezer to set for at least 1-2 hours. Slice into thick bars.
Store in the fridge or freezer. Makes about 8 bars.
